Chocolate Oats & Coconut Cookies

Last couple of weeks have been really tough due to a total lockdown owing to the Covid 19 pandemic. We were used to having food stuff available easily in the market and now we have to stingily use every ingredient that we have so that we could go a long way! We were so used to being superfluous that now its a challenge to be meagre in everything!

Today’s recipe is the result of this. When I looked into my pantry I saw a couple of ingredients which may not be used in the day to day cooking and I decided to put them to use to brighten the mood! My daughters are cookie monsters! These milk chocolate cookies are made healthy by replacing half of the all purpose flour by oats flour and also some desiccated coconut. The butter is salted Amul butter as is used in small amount. These cookies turned out better than I could have imagined! Here is the recipe:

Ingredients

  1. Oats Flour – 60 g(if you don’t have it continue using all purpose flour)
  2. All purpose flour – 60 g
  3. Desiccated coconut – 1/4 cup
  4. Milk chocolate grated – 100 g
  5. Baking powder – 1/4 tsp
  6. Amul butter softened – 50 g
  7. Brown sugar – 45 g
  8. Caster sugar – 45 g
  9. Egg small – 1
  10. Vanilla essence – 1/2 tsp
  11. Chocolate chips depending on how much you have (I just stuck a few on the top to save them for something else)

Method

  1. Mix together oats flour, all purpose flour, grated chocolate, baking powder and coconut.
  2. Beat butter and both the sugars till light and fluffy. Beat in the egg and the vanilla.
  3. Fold in the flour mixture till smooth batter is formed.
  4. On a baking tray lined with a baking mat or paper, deposit a tablespoon full of batter and flatten it slightly. Top with chocolate chips if you have them. Keep 2 inch distance between the cookies.
  5. Bake in a preheated oven at 175 degrees C for 15-20 min or till done.
  6. Let the cookies cool on the tray for a couple of minutes and then on a wire rack.

These cookies are absolutely delicious and the desired texture is crisp on the sides and chewy in the middle. You could use dark chocolate in place of milk and top them with nuts like almonds, walnuts or hazelnuts as well. Whatever is there in your pantry right? As I used Amul butter which is salted I did not add any salt. But if you are using unsalted butter add a pinch of salt to lift the taste. Oats flour can be made by grinding the oats in a food processor.

Start adjusting to this new normal and be innovative with whatever you have in the pantry. Thats the new mantra!
